As more and more Americans cut grains from their diets, cauliflower rice is growing in popularity and could soon be a fixture on Chipotle’s menu.
Chipotle Mexican Grill will begin testing out cauliflower rice in a few select locations – and if it proves popular with customers, the chain could roll out the healthy option nationwide.
According to
CNBC, the chain will begin offering a cauliflower rice option in 55 locations starting Wednesday. Chipotle customers in Colorado and Wisconsin will have the option to switch out white, or brown rice for cauliflower rice for an extra $2.
“To date, one out of three new menu item requests from Chipotle customers is for Cauliflower Rice,” Chief Marketing Officer Chris Brandt said in a statement.
Chipotle’s cauliflower rice is made with grilled cauliflower and seasoned with cilantro, lime juice and salt,
