With health being one of the biggest concerns of 2020, it’s no wonder healthy immune-boosting foods are going to be at the forefront as we move into the new year.
According to TODAY, registered dietician Frances Largeman-Roth predicts 2021 will see a rise in plant-based options and tech-assisted products, including the following healthy food trends:
Postbiotics – we have all heard of probiotics and prebiotics, but what exactly are postbiotics and why are they going to be so big in 2021? According to TODAY, postbiotics are the end product of the fermentation that goes on in the gut by probiotics and can be found in certain foods such as kefir, sourdough bread, and kimchi. TODAY reports postbiotics are currently being studied for anti-inflammatory and antioxidant benefits.
AI-created Foods – according to TODAY, artificial intelligence is helping food companies create everything from vegan dairy proteins to other plant-based alternatives to animal foods and will be big for 2021.
Kelp – goodbye kale, there’s another new superfood about to trend in 2021 and that’s kelp. Traditionally used in Japanese, Chinese and Korean foods for thousands of years, TODAY reports kelp (dried seaweed) is slowly making its way into American cuisine due to it being a nutritional powerhouse.
Microgreens – they may look cute but when it comes to providing our bodies with nutrients, microgreens are absolute giants, so it’s no wonder they’re popping up in grocery stores across the country. According to TODAY, microgreens have 40 times more nutrients than their mature counterparts and make a great addition to sandwiches, salads, and smoothies.
According to TODAY other trends for 2021 include foods that fight climate change, equitably sustained spices, ethnic-inspired condiments, and – due to the fact many of us are still working from home – elevated home coffee bars.
