Drew Barrymore is one busy woman, so when it comes time for cooking the talk show host, author, beauty mogul and lifestyle magazine editor needs something fast, delicious, and healthy.
Drew sat down with
Marie Claire to discuss her self-care routine and let the magazine in on the go-to recipe she loves to whip up.
“I get a lot of pleasure out of cooking because food is such a source of joy and inspiration for me,” Drew told
Marie Clarie. “I can eat pasta every single day of my life, but I have the metabolism of a sloth who is asleep at the switch, so I am educating myself on how to make healthy alternatives to dishes I love, like this one.”
Drew balances her love for carbs by switching out regular pasta for chickpea spaghetti in her go-to Chickpea Spaghetti Pasta recipe.
“Add a few tablespoons of olive oil to a pan, then throw in a couple of cloves of garlic with the skin on,” Drew told
Marie Claire about the tip she learned from chef José Andrés to help stop the garlic from burning. “Add in a handful of cherry tomatoes, halved. As your tomatoes cook, add some basil (fresh or dry), salt, and a couple of dollops each of harissa and tomato paste and stir. Keep stirring until the tomatoes are blistered.”
Meanwhile, Drew told the mag she boils water in a separate pot and cooks the chickpea spaghetti according to the directions on the box. Before draining, she reserves a little water which she adds to the sauce together with the drained pasta and stirs until all the noodles are coated.
